Yay!  I am so happy to receive my copy of Julie’s @ketomadesimple book! Just skimming over it quickly I noticed how approachable and straightforward the recipes are.  Not a lot of funky ingredients that you realize you don’t have until right before you start prepping the dish!  Julie’s account is one of the bigger accounts I found right when I started keto over a year ago. I love her style because she doesn’t overcomplicate her recipes or advice. I’ve seen her reply patiently and nicely millons of times to people’s  question of “How do I start?!” or “Why are your eyes a different color in your before and after pics?” 🤣 I personally just want to scream through my phone and tell people to just f@@king start already and eat the same way you did before-just leave out the freaking pasta or bread! It’s not that complicated! She’s nicer than me, tho. Anyway-Julie’s journey (she has battled PCOS and lost over 60 lbs!) is truly inspiring and I CANNOT wait to dive into this book and make allll the things! Makes two mini chaffles:⁣
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:⁣
• 1 egg⁣
• 1/4 cup shredded mozzarella⁣
• 1 tablespoon creamy peanut butter ⁣
• 1 tablespoon almond flour⁣
• 1 tablespoon swerve⁣
• 1 1/2 teaspoons vanilla⁣⁣
(Optional: add whipped cream or other desired toppings)⁣

𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀:⁣
1. Combine egg and peanut butter in a medium bowl, make sure it it completely combined.⁣
2. Add mozzarella cheese, almond flour, swerve, and chocolate chips and mix well. ⁣

🤩Spinach lemon cauliflower risotto with garlic prawns⁠
1 tablespoon olive oil⁠
1 medium onion, finely minced⁠
36-ounce Cauliflower “Rice” ⁠
1 cup vegetable broth ⁠
5 ounces baby spinach⁠
OPTION #1: CHEESY LEMON CREAM SAUCE ⁠
1 cup milk~1 cup white cheddar cheese ~1/4 cup grated parmesan cheese~1 teaspoon sea salt ~Juice of 1 lemon⁠
OPTION #2: DAIRY-FREE LEMON CREAM SAUCE 1 1/2 cups vegetable broth~1 cup raw cashews or pine nuts 1 tablespoon nutritional yeast~1 teaspoon sea salt~Juice of 1 lemon⁠
THE GARLIC CHILI PRAWNS 1 tablespoon olive oil or butter 2 garlic cloves, very finely minced 1 lb. uncooked, peeled prawns (tail on or off, your choice) 1/2 teaspoon paprika A pinch of chili flakes and sea salt⁠
Heat the oil in a large frying pan over medium heat. Add the onion and cook until it is transparent about 3-4 minutes. Add the cauliflower and broth and bring to a boil. Cook the cauliflower, stirring occasionally, until it is soft, about 8 minutes. Remove the pan from the heat. If you’re using the Cheesy Lemon Cream Sauce: Remove 2 cups of the cauliflower and add it to your blender with the milk. Blend on high until smooth. Add the cheddar, parmesan, sea salt, and lemon juice and blend again until the cheese has melted. If you’re using the Dairy-Free Lemon Cream Sauce: Remove 2 cups of the cauliflower and add it to your blender with the cashews, nutritional yeast, sea salt, and lemon juice and blend on high until smooth. Add the spinach to the cauliflower rice and put the pan back on the heat.⁠

Keto Pizza dough:
•1 and 3/4 cup melted mozzarella cheese
•3/4 cup almond flour
•3 TBSP cream cheese •1 egg
 pizza crust walk through in my highlights

Directions: 
Melt the cheese in the microwave until super runny, add the cream cheese and mix! Melt again if necessary. The key is to have really hot cheese so it’s really runny. Then add the almond flour and egg. Mix around. Use your hands and knead like dough. If it’s sticky, just wet your hands and keep kneading! Once all mixed up- roll into ball and place on parchment paper (not wax paper) place a sheet of parchment paper on top, press down and roll out the dough with a roller. Push up the edges, season and stab with a fork.  Bake at 425° for 8-10 minutes! Add topping and bake again for 2-4 minutes until the cheese melts!

-left over pork shoulder -green pepper and onion
-red sauce -mozzarella

Can you guys tell I'm obsessed with green beans I like to do roasts because they are simple and easy, once the roast is done I just throw it in the containers with the green beans and I'm done🥰 i also add shredded cheese🧀 I enjoy having my meal preps because they make sure I stay on track, especially at work with all the good food and treats around all the time

For the last 4 Wednesday’s I have been taking pictures of my journey back to my size 7’s. I’ve been back on track for 5 weeks but tracking macros + working out the last 4. As of two days ago, I am down 13.5 pounds, I haven’t weighed in 2 days & it feels amazing to just go with the flow. Seeing these pictures really puts things into perspective! Even though the scale has slowly gone down my body composition is changing so much. I’m feeling leaner, stronger, my baby muscles coming in in my arms, I’m able to do cartwheels without feeling like I’ll crash down. I’m feeling myself these days!! My mental health has improved so much too! We have a lot going on in our family right now & I’m able to process & handle it so much better. If it were last years me I would be eating my feelings & binging.

I know it’s easier said than done, but don’t let the scale rule your life. For me, weighing definitely helps me stay on track, so that I don’t snack here & there while telling myself “oh it’s ok”. Seeing the scale daily yes it’s frustrating when it’s not moving but it helps me stay motivated. Now with that said, the last two days I have felt really good not seeing what I weigh. I plan to weigh once a week, every Thursday (my rest day). Fingers crossed 🤞 I can keep it up. I like not weighing, it’s less stressful.

Also, TAKE PICTURES  I can not stress that enough. The scale might not move but pictures will show you that you’re losing inches still. Seeing pictures always helps.

8 tricks for doing the keto diet without driving yourself crazy 🤯

1. Don’t plan on eating three meals a day 

Don't make yourself crazy trying to plan for three meals a day, you'll probably only be interested in two because ketones dampen your appetite.

2. Always top off your plate with a drizzle of olive oil or avocado oil 🥑

The average person eats an eight- or 10-ounce steak. You should be eating maybe four ounces

4. Listen to your body 

What is generally recommended to people is to start with consuming less than 20 grams of net carbs. And then you wait for the transition symptoms, and most people will start to have them within a few days.

You've got to pay close attention to how you feel, your energy levels, and your mental clarity.

Pumpkin Spice Donuts! I found this recipe for a bundt cake and decided to make donuts out of it! I didn’t have Swerve so I used Monk Zero- from what I’m seeing online that wasn’t the best choice. Fasting genuinely seems to be the quickest way for me to get into a therapeutic level of ketosis. I have been drinking @pruvit ketones off and on (although only coffee and water during this fast) and those help me feel better too, but I need to take them more consistently.

Crispy skinned chicken breast topped with a creamy spinach and sundried tomato sauce, broccolini and roasted cauliflower⁠
 INSTRUCTION
.
To make this scrumptious meal start by heating a frying pan with a little olive oil and fry a chicken breast skin down until crispy, flip chicken breast over and cook for another 2-3mins.⁠
.
Place in a baking dish and into a preheated oven at 200C.⁠
.
While chicken is cooking blanch some cauliflower florets and broccolini until just tender, drain.⁠
.
In the same pan that you cooked the chicken sauté one rasher of bacon, diced, and toss through the cauliflower.⁠
.
Add to the baking dish along with the chicken. Season with salt and pepper.⁠
.
Bake until chicken is cooked through and cauliflower is crispy approx 10-15mins depending on the thickness of chicken.⁠
.
Meanwhile, sauté a handful of baby spinach and 3 sliced sundried tomatoes in a little olive oil, add some pouring cream and season with a sprinkle of powdered garlic and onion.⁠
.
Simmer until sauce starts to thicken.⁠
.
Sprinkle in grated Parmesan cheese and season to taste.⁠
.
When chicken is cooked through remove from oven and cover lightly with foil and allow to rest for 5 mins.⁠
.
While chicken is resting heat some butter and toss through the broccolini.⁠
.
Serve your chicken topped with sauce, broccolini and cauliflower on the side.⁠

The pic on the left was taken in 2014 I was close to my heaviest weight ever, I weighed more here than I did with any of my pregnancies and the scariest part of it all was I had lost about 10lbs by joining a boot camp that I would go to 5 days a week at 5 in the morning  I was beyond excited to be in Paris on a dream vacation but I was exhausted!! I remember being so tired and my feet and back were hurting from walking around all day, I decided to go back to our hotel to rest instead of going to the top of the Eiffel Tower, a decision that I still regret to this day! I wish I could go back in time and do it all over again, now I’ll just have to plan another trip out there and make it all the way to the top

 Being on a diet is hard but being overweight is harder!! I’ve lost a total of 58lbs so far and 65 from my heaviest weight 🤯 I started doing Keto off and on last year but really got serious about it (no cheats) in January 2019 and that’s when my weight loss really took off. I don’t feel like I’m missing out on anything, I eat whatever I want and I’m still loosing weight ‍️ I’m sharing this not to brag but I’m hoping that anyone that is trying to lose weight and says that they will start their diet next Monday or Next month, Or whenever really does it and sticks with it! It won’t be easy but I promise you it will be worth it ️Xoxo Chachy .

I’m going keto because after doing a lot of research I believe that it is the right type of diet for my body. My fiancé and I both start today and are going to give it our best shot. I’m going to keep all of you posted along the way with our fails/victories and everything in between.

Since my accident I’ve had a lot of trouble eating (especially since I lost teeth and had a lot of oral surgery) it’s been very difficult and disheartening. I have to wait 6-7 months for one of my teeth and have to wear a retainer with a tooth on it, I’ve been very upset about it and it is SO difficult. Many of our keto foods will have to require small af bites for me to eat it but we will try our best .
