洋食特集 日本発祥の洋食② クリームシチュー (cream stew:Ragoût de crème)

クリームシチューは、ベシャメルソースを使ったシチューです。日本の西洋料理は軍隊や関東地方のホテルから広まったものが多い中、クリームシチューは第二次世界大戦後に学校給食から広まりました。終戦後にアメリカから大量の小麦粉と脱脂粉乳が提供されたので、学校給食の献立を考える栄養士さんが考えたようです。

クリームシチュー自体は第二次世界大戦以前にもあったようですが、ベシャメルソースを作るときに牛乳を入れないで白ワインで伸ばしたものに鶏肉や野菜を入れていたようです。これは日本人に牛乳を受け付けない体質の人が多いから避けられたのではないかと思います。日本には1300年前から牛乳はありました。「蘇」と呼んでいました。チーズも作られていました。大阪や奈良が産地のようでした。しかし全く定着せず、一部の修行僧が精進料理の材料として使った程度のようです。食べた記録はほとんどありません。真言宗では、根菜は植物の根元を断ち切るから植物が生育できず殺生にあたると考える人もいます。再生可能な木の皮しか食べない僧侶にとっては、牛乳は牛を殺すことなく得られる食材なので使ったようでした。奈良県の山奥に残る牛乳鍋は、その名残です。

クリームシチューは、国民の栄養改善と、白米と一緒に食べるのに合うように開発されました。今でも日本人の平均身長はアジアで最も低く、女性の平均体重は世界一軽いと言われるほど小柄です。しかし第二次世界大戦前は、成人男性が160cm弱、成人女性が150cm弱でした。深刻なたんぱく質不足で脳卒中が多く、平均寿命も50歳でした。これらを改善するために海軍が行ってきた食の洋食化を第二次世界大戦後は学校主導で行いました。

クリームシチューと類似の料理は、西アフリカ、トルコ、アメリカ、ブラジルなどにもあります。米と合わせる食べ方も似ています。セネガルの大衆食堂で食べたものは、トマトライスにシチューをかけた感じで横浜のトルーヴィル(Tourville)そっくりでした。西アフリカは、日本がアフリカ向けに開発した収量の多い品種の米を使うので日本のシチューは合います。ただしこれらの国のシチューはとろみが少ないです。日本のクリームシチューの特徴は、白米にしっかり絡むように、英国海軍のカレーと同様の高い濃度のとろみがあります。

ただしクリームシチューは家庭料理で、ホテルやレストランで出すところはほとんどありません。写真もルーを製造している会社の調理例の広告を使っています。 作り方 ソテーパンにサラダ油を入れて熱し、3cm角ほどの大きさに切った鶏肉1kgを入れて肉の色が変わるまで中火で炒めます。焦がさないようにします。3cmほどの玉ねぎ300g、3cm角ほどのにんじん300gマッシュルーム薄切り150gを加えて全体に油がまわるまで炒めます。

チキンブイヨン(Chicken Boyon:fond de volaille)800gを加えて沸騰させ、あくを丁寧に取り、20分煮込みます。

ベシャメルソース1kg、ブロッコリー300gを加えて塩コショウで味を整えます。弱火で10分煮込みます。深い皿に盛り付けて出来上がり。 ■ベシャメルソース■

①ソテーパンに、無塩バター50g、強力粉50gを入れてごく弱火にかけて軽く沸くまでヘラでよく混ぜます。

②沸いたら牛乳180gを入れて薄めるようによく混ぜます。軽く沸くまでヘラでよく混ぜます。軽く沸いたら再度牛乳180gを入れて薄めるようによく混ぜます。これを5回繰り返し、牛乳を合計900g入れます。5回に分けて少しずつ加えるのが重要です。 ―――――― 日本で作るときには、食料品店や、日本ならどこにでもあるコンビニエンスストアーでクリームシチューやカレーのルーが売られています。材料を湯で煮込んでルーを入れるだけで作れます。ルーの外箱に作り方も書いてあります。

水で茹でるよりもブイヨンで煮込む方が美味しくなります。スイス、カメルーン、日本で作るなら、水で煮て沸騰したらマギーブイヨンを入れて少し薄いコンソメスープくらいの味にしてベシャメルソースを入れるとちょうど良い味になります。マギーブイヨンはスイスの固形ブイヨンです。世界的に見て、スイス、カメルーン、日本で特に多く売れています。

Broccoli Soup ( Brokoli Çorbası) 
Ingredients; 
1 bunch of broccoli (250-300gr), washed and chopped
1 onion, chopped
1 potato, diced
1 cup water
3 cups milk
2 tbsp oil
1 tbsp salt
½ tsp black pepper
Shredded mozzarella/cheddar/parmesan for garnish

How to make? 
In a pot, sauté onions with oil over medium heat and then add chopped broccoli and potatoes. Saute them for 3-4 minutes.
Add one cup of water and boil. Simmer for 6-8 minutes over low heat till broccoli and potatoes are tender. Then stir in milk, salt and simmer for additional 10 minutes. After that, puree the soup with a blender until it is smooth (if you prefer to have bulk pieces of broccoli in the soup, do not use blender).
Sprinkle black pepper and shredded mozzarella/cheddar/parmesan on top and serve warm.

Udah sejak lama nih pengen makan yang beginian. Tapi selalu gak jadi karena takut. Beruntung banget sekarang ada pengganti santan @FiberCreme , yang sama creamy-nya tapi lebih rendah lemak, rendah kalori dan bebas kolesterol. Jadi yuk coba bikin roti jala dan kare kayak gini. Bahan:
200 gr tepung terigu
1/2 sdt kunyit bubuk
1 sdt garam
2 sdm @FiberCreme_TV larutkan menggunakan
350 ml air
1 butir telur
1 sdm minyak sayur

Cara:
1. Campur tepung terigu, kunyit bubuk, garam. Masukkan larutan @FiberCreme, aduk rata, lalu masukkan telur. Aduk2 sampai adonan licin.
2. Masukkan minyak sayur, aduk rata. Lalu saring adonan biar gak ada adonan yg bergerindil.
3. Masukkan adonan ke dlm piping bag, gunting ujung nya.
4. Siapkan wajan anti lengket. Semprotkan adonan membentuk jaring2, biarkan matang, angkat, lipat dan gulung.

Buongiorno!  Ma quanto è bello pastrocchiare in cucina? Salato o dolce non importa, basta divertirsi! 

Ingredienti:
- 250 gr di farina 00
- 20 gr di olio
- 130 ml di acqua tiepida
- 1 cucchiaino di sale
- 1 pizzico di zucchero
- mezza bustina di lievito istantaneo per preparazioni salate
- salsa di pomodoro q.b.
- 100 gr di mozzarella

Preparazione:
- Mettere in una ciotola la farina, l'acqua tiepida, l'olio, il sale, lo zucchero e il lievito istantaneo
- Impastare il tutto fino ad ottenere un panetto liscio e omogeneo
- Stendere il panetto con il mattarello su un piano infarinato fino ad ottenere uno spessore molto ridotto
- Con l'aiuto di una formina rotonda (o di un bicchiere) ricavare delle focaccine circolari fino ad esaurire l'intero impasto
- Riempire metà delle focaccine con un po' di salsa di pomodoro e di mozzarella
- Chiudere ognuna focaccina con la sua corrispondente vuota sovrapponendola, facendo pressione con il dito o con una forchetta per sigillarle
- Cuocere in padella per circa 5 minuti ogni lato delle focaccine

INGREDIENTS:
Makes 12, 25 gram balls of bliss...
• 1 cup almond meal
• 1/4 cup LSA (ground linseed, sunflower seed and almond)
• 1/4 cup raw organic cacao powder
• 1/2 tsp chaga mushroom powder
• 1/2 tsp reishi mushroom powder
• 1/2 tsp vanilla powder
• 1/2 tsp cinnamon • A pinch of Himalayan salt
• 1 TBS melted cacao butter
• 1 TBS maple syrup, or rice malt syrup
• Melted, dark vegan chocolate to decorate, dip, or squiggle as I did.

INSTRUCTIONS:
• Combine all the ingredients in a large bowl and use your hands to work the mix into a dough. If you feel like it’s too dry, add 1/4 tsp maple or cacao butter at a time until it holds together nicely. Be sure to do this only after you’ve given it a good kneading with your hands as the natural oils from the ground nuts will start to release.
If however, you find it to wet, add 1/4 tsp almond meal at a time until you are happy with the consistency.
• Roll into 25 gram balls.
• Place in the freezer to set for 20 minutes. Meanwhile, melt the chocolate, to remove the balls and gently decorate as you wish.

Here is the #recipe!

1 package SF Jell-O powder
1 package gelatin
1/3 C water

Mix all ingredients in a saucepan over medium heat. Stir with a rubber spatula continuously. 
When all contents dissolved/contents gently begin to bubble, remove from heat and transfer to molds. 
Chill in the fridge until set ~15 to 30 minutes

재료컷엔 없지만 계란 4개도(또띠아 2개 기준) 준비해주세요! 이유는.. 원랜 체다치즈로 지단을 만들어 케밥을 만들려했으나.. 실패해서 급하게 계란 지단만들어서 또띠아로 대체했어요하지만 결과는 대성공!! 오히려 체다치즈로 만드는거보다 훨씬 간단하고 맛있는거같아요 .
양념: 간장5테이블스푼, 다진마늘1테이블스푼, 스테비아2티스푼, 고춧가루3티스푼 섞어주세요. (고춧가루 양은 맵기 취향에 따라 조절해주세요. 매운게 싫으시다면 빼셔도 됩니당 )
간 고기 120g 볼에 넣어주세요. (또띠아 2개 기준)
베이컨 두줄은 잘게 썰어주시고 숙주나물 두 줌도 볼에 넣어주세요. 
볼에 미리 만들어둔 양념을 넣고 잘 섞어준 후 팬에 넣어 볶아줍니다. 
간장양념은 잘 타니 약한불에 조리해주세요.
고기가 익을동안 양배추는 얇게 채썰어주세요
계란으로는 지단을 만들거에요. 또띠아 하나당 계란 두개가 필요합니다. 지단이 넓어야 나중에 터지지않아요 넓게 부쳐주세요!
도마에 종이호일을 깔고 지단을 올린 후 볶은 고기, 양배추, 고수, 체다치즈를 넣어 말아주면 끝입니당! (취향에 따라 고수는 생략 가능합니다) .
Keto tortilla wrap

For two wraps
Sauce: 5tbsp of zero sugar soy sauce, 1tbsp of minced garlic, 2tbsp of red pepper power (or 3 if you like your food spicy!) Put 120g of ground non-lean ground beef in a bowl. Cut two slices of bacon in small pieces and put it with the beef. 
Then add two handful of mung bean sprouts to the bowl. 
Add the sauce you made before and mix everything. Your tortilla stuffing is prepared.
Put little or no butter/oil in a pan (because the wraps could leak oil) and cook at low heat since soy sauce burns easily.

Meanwhile cut cabbage into fine long shreds to put in the wraps later.

Batter 2 eggs and spead them very thinly on a non sticky pan without butter. Move it to a paper foil in a plate when it's 
ready and repeat with 2 more eggs for wrap number 2.

Put half the tortilla stuffing in each wrap, then add half the sliced cabbage, cheddar cheese and some coriander on it, 
then roll it up. (Coriander is optional)

What to do -
1.  Slice your apples about 3/4″ thick. Use a knife, corer, or pastry tip to make a hole in the center.
2. Color you cream cheese if you’d like. We just added a drop of neon food coloring to get these bright colors. Add sprinkles.

Addy totally winged this one and it turned out amazing.
1. Preheat oven to 450 farenheit. 
2. Start by creating an assembly line of a bowl with 2 raw eggs beaten with garlic, a plate with breadcrumbs, Italian seasoning, and parmesan cheese, and a hot pan with olive oil.
2. Dip the chicken thighs (or breasts) into the egg then into the breadcrumb mixture and pan fry for 2 minutes on each side until chicken is golden. Transfer to a baking sheet covered in parchment. 
3. Repeat for all pieces of chicken. Once all the pieces are on the baking sheet, top them with your favorite tomato sauce then top that with grated parmesan cheese.
4.  Place baking sheet in the oven for 15-20 minutes. We cooked 1 lb of chicken thighs for 15 minutes and they were perfect. 
5. We made some zoodles to go with the chicken, but any veggies or pasta would work!

Sage Butter Gnocchi

900 grams gnocchi
8 ounces of vegan butter
1 bushel of fresh sage leaves, picked 
1 tsp of fresh thyme (optional)
A few sprigs of fresh rosemary (optional)
Salt and pepper to taste

Cook gnocchi according to package. For the sauce, heat up the vegan butter in a pan, let the butter melt. Next add the fresh sage and other fresh herbs if wanted. Let the sage wilt but make sure to not let the vegan butter turn brown. Once the sage has wilted, transfer the sauce to the gnocchi and add salt and pepper.

2. 蘑菇切片,洋蔥切碎,用牛油及蒜蓉炒香
3. 加入牛奶、百里香、芝士,醬汁煮至杰身後熄火
4. 加入意粉並拌勻,灑上芝士碎、黑椒、百里香就完成。

Who doesn’t love breakfast for dinner?! This paleo recipe is one of my staples — it doesn’t require many ingredients & is packed with great protein & good fats. All it entails is making your own turkey patty, scrambling some eggs (I used a circular mold on the inside of the pan to shape them ), & stacking both with some yummy avocado (+ cheese if non-paleo) on top! 中秋一過~
傍晚走在街頭
已經開始漸漸感受到秋的氣息
枕邊人幾天前心血來潮自己到超市採買
想說時序入秋~提早秋補
所以貼心的自作主張購入鮑魚蔘雞湯調理包
想幫平日辛苦上班
假日也不得閒的老婆大人補身打個底先🥰

有去過韓國的人兒們都知道
不管是自由行還是跟團
品嚐人蔘雞湯是一定不能放過的必走行程
是的...
這懶人包裡面就是放著一隻全雞
雞肚裡塞著糯米、栗子、紅棗跟鮑魚
還有重點人物-水蔘一支
雖然整包是1000c.c.的份量
但是倒入我最愛的琺瑯鍋裡
突然覺得~~
這隻雞躺在裡面孤獨感油然而生啊!(˘・_・˘)
打開冰箱把裡頭的食材巡了一輪
看看還有什麼可以添加
🤔有了有了....
上次在築地買的乾貨干貝
韓國大白菜🥬
玉米筍
乾豆皮
全部洗一洗、泡一泡、切一切
湯鍋裡再加入大約400c.c.的水
備好的材料通通擺入鍋裡燉煮
噗嚕~噗嚕~噗嚕~鍋內開始不斷傳出聲響
驅使著我不由自主的打開鍋蓋
細火慢熬揉合交融的香氣陣陣撲鼻
盯著不斷冒泡的鍋邊
那聲音那畫面好療癒啊
這樣的鍋底好不豐富哪!
枕邊人在熄火前又加了之前在韓國買的蔘粉
提升了整鍋湯的蔘味
盛碗上桌囉!
我超級喜歡琺瑯鍋的聚熱保溫能力
而且煮滾熄火後鍋內還會續滾一會兒
很適合用在燉煮料理上
喝上一口湯有干貝的鮮甜味
雞肉口感細緻
骨頭燉到一咬就碎
整碗湯水滿滿的精華哪!
滋味滿分
吃完整個脾胃都暖了起來

️枕邊人用鍋裡剩下一點點的湯水煮上兩包麵,一整個飽到美叮美噹,害怕肚子空虛的人兒也可以試試,麵體另外煮不會糊了整碗湯,又能吸取湯汁精華,一丁點兒都不浪費

По Вашим просьбам публикую мой собственный #рецепт вкуснейшего,  супер-простого, а главное,  быстрого супа.

Сохраняйте в закладочки и поехали! ⠀
Из рассчета на 2-2.5-литровую кастрюлю
⠀
‍СОСТАВ:
⠀
 вода - 0.75 л
⠀
сливки - 0.75 л
⠀
🧀тертый сыр с мягким сливочным вкусом - 150 г (но сыра много не бывает)
⠀
🥕средняя морковь - 1 шт
⠀
большая сладкая луковица - 1 шт
⠀
🥔большая картофелина - 1 шт
⠀
грибы - 300 г ( но можно и больше)
⠀
▪соль по вкусу
⠀
‍СПОСОБ:
⠀
соединить воду и сливки в равных долях и довести до кипения
⠀
▪добавить нарезанный лук и тертую морковь и довести до кипения
⠀
добавить нарезанный средними кубиками картофель и посолить
⠀
▪пока картофель разваривается, нарезать грибы
⠀
как только картофель стал мягким,  добавить грибы
⠀
▪после кипения поварить минут 5
⠀
добавить тертый сыр,  хорошенько размешать и прогреть
⠀
Ваш #суп готов! ⠀
ПРЕДУПРЕЖДЕНИЕ:

Зелень петрушки, которая обычно придает пикантности грибам,  в этом супе НЕ нужна.
С сыром она почему-то не сочетается.©

Incepe-ti ziua cu-n delicios #caffelatte cu cocos si ciocolata .

Kek Pisang Coklat menggunakan Periuk Nasi

Bahan-bahan (ingredients)
3 biji pisang (3 banana)
2 biji telur (2 eggs)
1/3 blok mentega dicairkan (lebih kurang 80g) — 1/3 block of butter melted (around 80g)
1/2 cawan gula (1/2 cup sugar)
1 sudu kecil bikarbonat soda (1 tsp bicarbonate of soda)
1 sudu kecil tepung penaik (1 tsp baking powder)
1/2 sudu kecil garam (1/2 tsp salt)
1 cawan tepung gandum (1 cup wheat flour)
1/2 cawan serbuk koko (1/2 cup coco powder)
1/2 cawan coklat masakan (1/2 cup cooking chocolate)

Nota : Sapukan mentega pada periuk nasi. Tekan button Cook..kemudian bila dah bertukar ke Warm..biarkan rehat selama 20-25 minit. Ulang step ni lagi sekali. Tempoh “cook” mungkin tak sama untuk setiap periuk nasi. So just make sure total cook+warm tu lebih kurang 50 minit.

Note : Coat the rice cooker with butter. Switch to Cook mode, and once the rice cooker turns to Warm..let the cake rest for 20-25 minutes. Repeat this process for one more time. The “cooking” period is different from one rice cooker to another. Please ensure that the total cook+warm period is around 50 minutes.

Składniki:
▪️170g mąki orkiszowej
▪️100g mąki migdałowej @vivio_pl
▪️2 jajka 🥚
▪️słodzidło, aromat, szczypta soli
▪️50g masła
+ 2 jabłka, śliwki i cynamon
.
️Wszystkie składniki (oprócz owoców i cynamonu) łączymy i zagniatamy. Ciasto wkładamy na ok 1h do lodówki. Po tym czasie wałkujemy ciasto na kształt okręgu. Na środek układamy jabłka pokrojone na plasterki, a na nie połówki śliwek. Posypujemy cynamonem i opcjonalnie słodzidłem. Pieczemy ok 35 min w 180 stopniach Celsjusza. Smacznego! ️

Fig, goat cheese and olive foccacia with hints of fresh zaatar. This combination of flavours is out of this world. Sweetness from the caramelized figs; tangyiness from the oozing goat cheese, an aromatic bitterness from the zaatar, and a delicious sour note from the green olives. Divine. 
Swipe

Recipe: 
Makes 2 (25 x 32cm )

For the dough
All purpose flour  5 cups 
yeast 1 tbsp
fine sea salt 1 tsp
Sugar 2 tsp
water, lukewarm about 11/2 cup or more
olive oil  3/4 cup

For the topping
ripe figs, cut in quarters 
soft goat cheese , torn into pieces
fresh rosemary needles or fresh thyme leaves, a small handful
flaky sea salt
Pitted green olives

For the dough:
Combine the flour, yeast, salt, and sugar in the bowl of a stand mixer fitted with the dough hook. Add the lukewarm water and half the olive oil  and knead on medium-high speed for a few minutes until well combined.  If the dough is sticky, add more flour. 
Transfer the dough to the countertop and continue kneading and punching  down with the hands for about  until you have a smooth and elastic ball of dough. 
Place the dough back in the mixer bowl, cover with a  towel, and let rise in a warm place  for about 60 minutes or until doubled in size.

When the dough has doubled in size, punch it down, take it out of the bowl, and knead for 1 minute. 
Using your hands, stretch and spread dough on the prepared baking sheet.  Cover with a  towel and let rise in a warm place for about 20 minutes or until puffy.

Using  your finger, punch  holes into the surface of the dough. Pour the remaining olive oil over the dough and into the holes. Spread the olives and figs (cut side up) over the focaccia and push them gently into the dough. Sprinkle with the the goat cheese pieces, rosemary or thyme, and a little flaky sea salt. Bake for 20 minutes or until golden
